I have to start this post out by saying thank to those of you who sent me sweet emails and comments of encouragement concerning {THIS} post. Seriously warms my heart! Loves you!
If you follow me on Facebook you may have read that I had to re-make a certain peanut butter pie. It's true, I made this same pie 2 days ago and it was lumpy and didn't firm up. I was really sad, considering the fact that I took it to a family party. Dohhhh!
Oh well, I tried it again yesterday and I now know what I did wrong, and I can pass that little bit of info on to you.
I originally found the recipe {HERE}. This pie is DE-LISH. Very creamy but still has texture from the crunchy peanut butter used in the recipe.
- You will need:
- * 1 1/2 cups heavy whipping cream
- * 1/4 cup sugar
- * 8 ounces cream cheese
- * 1 cup crunchy peanut butter
- * 1 cup powdered sugar
- * 1 graham cracker or Oreo crust, store-bought or premade
1. Whip cream with 1/4 cup sugar. Now this is where I went wrong with my first pie. I didn't whip the cream and sugar long enough and my pie was lumpy.
2. Mix all other ingredients until smooth and fold in whipped cream until well blended. 3. Pour mixture into a graham or Oreo cracker crust and chill for several hours before serving. I would say it needs at least 2 hours to set, but overnight would be best.
I used a graham cracker crust on my first pie but then decided to try an Oreo pie crust. The Oreo crust tasted better with the peanut butter, but you can try whichever you like.
This will definitely get made again, and I'm glad I didn't give up on this recipe cause it's a yummy one!
